Smart Environments: Our Afterschool Program
Transformative Learning Beyond the Classroom
Smart Environments is the flagship afterschool program of the Institute for Health and Food Literacy Education. Designed to empower children in underserved communities, it offers practical, hands-on knowledge in nutrition, wellness, sustainability, and health. By incorporating activities like gardening, cooking, and health labs, this innovative program bridges the gap between education and real-life application, ensuring students gain the knowledge and skills necessary for long-term health and wellness.
Our Model
The Smart Environments Program provides a transformative after-school experience for students in Grades 4 through 8. This holistic program goes beyond traditional academics, integrating health, food literacy, and environmental stewardship into the curriculum. It’s not just about acquiring knowledge, but about applying it effectively in real-world situations.
-
At the heart of the Smart Environments Program is our commitment to interactive and experiential learning. We believe the most effective education occurs when students are actively engaged rather than passive recipients of information. Our dynamic learning environments—including gardens, teaching kitchens, science labs, and collaborative spaces—are designed to provide hands-on experiences that are both educational and transformative.
-
Our curriculum supports intellectual growth while fostering social and emotional well-being. We aim to develop the whole student, ensuring they build critical life skills such as empathy, teamwork, and resilience. These essential skills empower students to navigate the complexities of adolescence and prepare for future challenges.
-
We embed sustainability and environmental awareness throughout the curriculum, encouraging students to become thoughtful stewards of the planet. Activities such as gardening, hydroponics, and food waste reduction highlight the interconnectedness of personal health, community well-being, and environmental conservation.
-
Recognizing the importance of community, the program actively engages parents, local businesses, and community leaders in the educational process. This collaborative approach enriches the learning experience and helps students connect their studies to the broader world, fostering a sense of responsibility and belonging.
-
Technology plays a pivotal role in our program, enhancing both learning outcomes and student engagement. From digital tools for analyzing food systems to interactive applications in science and health education, technology inspires curiosity and creativity while reinforcing essential skills.
-
The Smart Environments Program is aligned with global educational initiatives, including the United Nations’ Sustainable Development Goals. This alignment ensures that students are prepared to meet local and national expectations while contributing to global progress in health, sustainability, and equity.
By embracing this forward-thinking educational model, the Smart Environments Program equips students with the knowledge, skills, and values needed to thrive in the 21st century. We are dedicated to nurturing the next generation of leaders and innovators, ready to make a positive impact in their communities and the world.

Educational & Learning Goals
The Smart Environments Program is dedicated to enriching students academically while also providing practical life skills and a broader understanding of the world.
-
In our innovative Teaching Kitchen, students actively engage in cooking and learn about the nutritional value of different foods. This goal aims to teach students how to make healthy food choices and understand the impact of nutrition on their body and overall well-being. By preparing meals from scratch, they grasp the importance of diet in maintaining health and preventing disease.
-
Our program emphasizes the importance of environmental conservation and sustainability. Students explore sustainable practices such as composting and recycling and understand their impact on environmental health. This learning goal cultivates a sense of responsibility towards preserving our planet for future generations.
-
Through family-style meals in The Dining Room, students learn the social aspect of eating and the importance of community engagement. This environment encourages them to participate in all aspects of meal preparation and sharing, from setting the table to discussing the cultural and seasonal aspects of the foods they consume. These activities foster teamwork, communication skills, and an appreciation for diverse food traditions.
-
Our curriculum encourages students to think critically and solve problems creatively. Interactive projects and challenges in The Garden, The Teaching Kitchen, and the Health Lab allow students to apply their knowledge to real-world scenarios, helping them develop their ability to think on their feet and devise innovative solutions to everyday problems.
-
Our goal is to bridge the gap between academic learning and real-world applications, ensuring students can apply their knowledge in meaningful ways. Through hands-on activities such as scientific experiments in The Garden, nutritional analysis in The Teaching Kitchen, and health-focused projects in the Health Lab, students gain a practical understanding of how classroom concepts translate into real-life situations and their broader impact on the world.
-
A key goal of our program is to promote overall health and wellness. By educating students about the fundamentals of good health, including physical activity, balanced nutrition, and mental well-being, we equip them with the knowledge to lead healthy, active lives.

Why We Created The Program
The Smart Environments Program was created with the belief that education has the power to transform lives—not only in the classroom but across communities and generations. We address critical gaps in health, nutrition, and environmental education, aiming to empower individuals in underserved communities to lead healthier, more sustainable lives.
Empowering the Next Generation
We understand that lasting change begins with education. By providing comprehensive knowledge and resources, we aim to equip students and their families with the necessary tools to make informed health and nutrition choices. Our commitment extends beyond providing information; we empower communities to transform this knowledge into action, fostering a cycle of continuous improvement and well-being.
Aligning with Global Goals
Our alignment with the Sustainable Development Goals (SDGs) underscores our commitment to global change from the grassroots level. By nurturing a generation that is informed about and responsible for their health, nutrition, and environmental impacts, we contribute significantly to global efforts aimed at creating a sustainable and equitable future.
Addressing Health Disparities
A core focus of our program is to reduce health disparities, particularly among young women of color. By promoting equitable access to nutrition education, we address the immediate and long-term health consequences that disproportionately affect underserved groups. This program helps mitigate maternal health disparities linked to nutrition, which are prevalent in low-income communities, thereby breaking a cycle of health inequity.
Holistic Nutrition Education
We believe that understanding nutrition involves more than learning about food groups and calories—it's about grasping the holistic impacts of dietary choices on physical, mental, and social health. Our program emphasizes the comprehensive benefits of good nutrition, preparing students to make decisions that enhance their well-being and quality of life.
Bridging the Education Gap
The Smart Environments Program actively promotes engagement between students, their families, and the wider community. Through educational materials, workshops, and interactive sessions, we foster open communication and practical learning. Our students become health ambassadors within their homes and communities, driving positive change and encouraging healthier lifestyles.
